It is a heavy-duty, high-capacity sigma mixer designed for large-scale commercial bakery production. It efficiently handles large volumes of dough for products such as bread, buns, rolls, pizza bases, flatbreads, crackers, cookies, biscuits, and various snacks while ensuring consistent quality and proper gluten development.
The mixer is available in Stainless Steel 316, Stainless Steel 304, and Mild Steel. Stainless steel versions can be finished in matt or mirror polish as per customer requirements, while mild steel models receive one coat of red oxide and two coats of epoxy paint.
It uses tangential action of dual ‘Z’-shaped (sigma) kneading blades that rotate at different speeds toward each other. This creates bulk movement, stretching, folding, dividing, and recombining of the dough. Discharge is achieved by tilting the container, bottom valves, or an extrusion screw.
Models range from ASM-50 (approx. 50 liters working / 80 liters gross capacity) up to ASM-3000 (approx. 3000 liters working / 3800 liters gross capacity). Motor power varies by model and duty (general or heavy-duty), and voltage can be adjusted to local requirements.
Discharge can be manual (hand-wheel operated) or automatic (hydraulic operated). Additional options include an automatic valve discharge system or a screw (extruder) system for continuous or controlled product removal.
Yes. A jacket for heating or cooling applications can be provided, along with mineral wool insulation and cladding on the jacket. Optional blade cooling arrangements further help maintain ideal dough temperature and minimize heat buildup.
PTFE shaft sealing is provided for food-grade compatibility. A minimum gap between the trough inner shell and blades reduces product sticking. Tangential Z-blades deliver uniform mixing, and optional spray or vacuum systems are available on demand.
In the tangential design (commonly used for higher-viscosity materials like stiff doughs), blades meet tangentially and typically rotate at different speeds (often 3:2 ratio). Overlapping blades rotate at the same speed and are better suited for lighter-viscosity materials, offering faster interchange but lower kneading/shearing action.
Optional features include a liquid spray system, vacuum system, blades cooling arrangement, screw system, and automatic valve discharge system. Custom heating/cooling jackets and specialized configurations are also available.
