It excels where conventional planetary or spiral mixers fall short by providing intensive kneading and folding that develops gluten structure uniformly without overworking the dough, ensuring consistent texture, taste, and shelf life.
The mixer features two powerful Z-shaped blades that rotate at different speeds (typically in a 3:2 ratio) in a U-shaped trough. This counter-rotating tangential action creates intensive shearing, folding, stretching, and recombining motions. The blades scrape the sides and bottom to eliminate dead zones, thoroughly blending ingredients like flour, fats, sugars, and water for optimal hydration and dough development.
Models range from lab/pilot scale (ASM-50: 50L working capacity) to large production sizes (up to ASM-3000: 3000L working / 3800L gross capacity). Motor power varies from 5 HP (general duty) to 120 HP (heavy duty), with customizable power voltage to suit local requirements. Fill volumes are typically 40-65% of trough capacity.
Contact parts are available in Stainless Steel 304 or 316 (with matt or mirror polish) for superior hygiene and corrosion resistance, or Mild Steel with epoxy paint. PTFE shaft seals ensure food-grade compatibility, while minimal gaps between blades and trough prevent product sticking. Hard chrome plating on blades adds wear resistance.
Discharge can be achieved via manual hand-wheel tilting, hydraulic automatic tilting (up to 110°), bottom valves, or an extrusion screw. These options facilitate easy unloading of heavy, sticky doughs, minimize waste, and support efficient cleaning between batches.
Yes. An optional jacket for heating or cooling (with mineral wool insulation and cladding) is available, along with cored blades in some configurations.
