It is a specialized heavy-duty sigma mixer (also called a Z-blade or double-arm kneader) designed to thoroughly mix, knead, and homogenize highly viscous, sticky pastes and doughs such as marzipan that ordinary mixers cannot process effectively.
Marzipan is a dense, pliable almond-and-sugar paste with very high viscosity. The powerful counter-rotating Z-blades deliver intense shearing and kneading that achieve a smooth, uniform texture without incorporating excess air—ideal for shaping into candies, coverings, or figurines.
Two precision Z-shaped blades rotate at different speeds inside a U- or W-shaped trough. Their combined action continuously folds, stretches, shears, and recombines the material, breaking down lumps and ensuring complete homogenization of even the thickest batches.
The machine is available in Mild Steel, Stainless Steel 304, and Stainless Steel 316. Stainless-steel surfaces can be finished in matte or mirror polish, while mild-steel units receive a red-oxide primer followed by two coats of epoxy paint.
Models range from approximately 50 liters working capacity (ASM-50) up to 3 000 liters (ASM-3000), with corresponding gross volumes and motor power options for general or heavy-duty service. Voltage can be customized to local requirements.
Discharge can be performed by tilting the trough, opening bottom valves, or using a side-mounted extrusion screw. The mechanism itself may be manual (hand-wheel) or automatic (hydraulic).
Yes. Optional jacketed troughs provide precise heating or cooling. The jackets are insulated with mineral wool and protected by outer cladding to maintain consistent thermal conditions throughout the batch.
Ultra-narrow clearances between the blades and trough walls eliminate material buildup, while food-grade PTFE shaft seals maintain hygienic sealing and prevent leakage—critical for confectionery and food applications.
Tangential blades (usually running at a 3:2 speed ratio) generate high shear suited to dense materials like marzipan and adhesives. Overlapping blades rotate at the same speed, offer milder kneading, and are preferred for lower-viscosity products such as creams or pastes.
Available upgrades include a vacuum system (to remove air bubbles), liquid-spray system, blade-cooling arrangement, hydraulic tilting, automatic valve discharge, and custom heating/cooling jackets for enhanced process control.
