A Marzipan Sigma Mixer, also widely known as a Sigma Kneader, Z-Blade Mixer, or Double Arm Kneader, is a robust industrial mixing machine engineered specifically for handling highly viscous, thick, and sticky materials. This powerful equipment has become an essential asset in food processing, pharmaceutical, chemical, and confectionery industries where uniform blending of dense pastes is critical. Whether you’re producing marzipan, cookie dough, adhesives, rubber compounds, or cosmetic creams, the sigma mixer delivers unmatched performance in kneading and homogenizing challenging substances that standard mixers simply cannot manage.
The heart of a Marzipan Sigma Mixer lies in its distinctive Z-shaped (sigma) blades that rotate at different speeds in a heavy-duty trough. These overlapping blades create a folding, shearing, and kneading action that thoroughly mixes even the stickiest compounds. The double arm design ensures every particle experiences consistent pressure and movement, eliminating lumps and achieving perfect homogeneity.
Unlike planetary mixers or ribbon blenders, the Z-Blade Mixer excels with materials having high viscosity (often exceeding 1,000,000 centipoise). Its rugged construction, typically from stainless steel or other food-grade alloys, makes it ideal for both sanitary food applications and aggressive industrial processes. Modern sigma kneaders come with features like jacketed troughs for temperature control (heating or cooling), vacuum operation, hydraulic tilting for easy discharge, and PLC-based automation for precise recipe control.

Use in Marzipan Production
Marzipan — a thick, pliable confectionery paste made from ground almonds, sugar, and sometimes other ingredients — has a high viscosity and dough-like consistency. The sigma mixer excels at kneading these materials without incorporating excess air, resulting in a smooth, dense texture ideal for shaping into candies, coverings, or figurines. It’s commonly used in food and confectionery industries for products like marzipan, chewing gum, biscuit dough, sugar pastes, and fondant.
It is a robust industrial mixing machine (also known as a Sigma Kneader, Z-Blade Mixer, or Double Arm Kneader) engineered for highly viscous, thick, and sticky materials such as marzipan, cookie dough, and other dense pastes used in food, confectionery, pharmaceutical, and chemical industries.
Two Z-shaped (sigma) blades rotate at different speeds inside a heavy-duty trough. The overlapping action creates continuous folding, shearing, and kneading that thoroughly mixes even the stickiest compounds and eliminates lumps for perfect homogeneity.
Marzipan and similar confectionery pastes have very high viscosity. The powerful Z-blade kneading action ensures uniform blending of almonds, sugar, and other ingredients, delivering consistent texture that standard mixers cannot achieve.
The machine is offered in Mild Steel, Stainless Steel 304, and Stainless Steel 316. Stainless-steel surfaces can be finished in matte or mirror polish, while mild-steel builds receive a red-oxide primer coat followed by dual epoxy paint.
Models range from ASM-50 (approx. 50 liters working / 80 liters gross) to ASM-3000 (approx. 3000 liters working / 3800 liters gross), with general or heavy-duty motor options and voltage adjustable to local requirements.
Finished product can be unloaded by tilting the trough, opening bottom drain valves, or using a side extrusion screw. Discharge may be manual (hand-wheel) or automatic (hydraulic).
Yes. Optional thermal jackets provide heating or cooling. The jackets are insulated with mineral wool and protected by outer metal cladding to maintain process temperature.
Precision tangential Z-blades ensure even mixing, micro-clearances between blades and trough walls prevent residue buildup, and hygienic PTFE shaft packings maintain food-grade sealing.
Tangential blades (typically running at a 3:2 speed ratio) deliver high shear for dense materials such as marzipan and adhesives. Overlapping blades rotate at the same speed, suit lower-viscosity products, and provide faster material interchange with milder kneading.
Available upgrades include a vacuum system, liquid spray system, blade-cooling arrangement, hydraulic tilting, and custom heating/cooling jackets for precise process control.
